Characteristics and properties: Green split peas are made exclusively from organic green split peas. They appear as small, light green pellets that break down when cooked, transforming into a creamy consistency. This legume is prized as a source of plant-based protein and fiber; it is also relatively low in fat and provides B vitamins and minerals such as iron and magnesium.
Directions: Before using, it is advisable to rinse the peas under running water to remove any impurities. Split peas generally do not require soaking and cook more quickly than whole legumes; the approximate cooking time is between 20 and 35 minutes , varying depending on the quantity and age of the product. [Inference] For maximum flavor, add salt only at the end of cooking and use vegetable broth instead of water. If you want a smooth consistency, blend the peas with an immersion blender at the end of cooking.
In the kitchen: Split peas are ideal for soups and cream soups: a sauté of onion, carrot, and celery, the addition of peas and broth, and a prolonged cooking time yield a soft, enveloping cream. They can replace chickpeas in dishes like hummus, adding a bright color and delicate flavor, and are perfect for dhal and spicy Indian or Middle Eastern curries. Combining cooked split peas with grains like rice or quinoa, aromatic herbs, and spices creates veggie balls or burgers that can be baked or pan-fried. Boiled and cooled, they are also ideal for enhancing cold salads and bowls to boost their protein content.
For a quick recipe: sauté onion and garlic in a drizzle of oil, add 200 g of previously rinsed split peas and about 1 liter of vegetable stock, cook for 25–30 minutes until the peas are soft, blend with an immersion blender, season with salt and pepper, and finish with a drizzle of oil and croutons.
