Features and properties: Zolfini beans get their name from their light yellow, sulfur-like color.
Grown in Tuscany, these beans are renowned for their unique characteristics, due to the climate and soil conditions of the region.
They are small, slightly flattened in shape, with an almost imperceptible skin. Their flavour is intense and their consistency is creamy.
in the kitchen: Zolfini beans are ideal for preparing side dishes, creams and soups.
To enhance their flavor, simply cook them with garlic and sage, and season with oil and pepper. For better rehydration, soaking in cold water for 4-5 hours is recommended. Cooking times vary according to personal taste, from 15 to 60 minutes.
It is important to add salt at the end of cooking and use three parts water for one part product.
