Zolfini Qualità Superiore beans are a rare and prized legume, traditionally from Tuscany. Small, rounded, and straw-yellow in color, they are distinguished by their very thin skin and intense, enveloping flavor, ideal for simple yet characterful dishes.
Characteristics and properties: Carefully grown and selected for their superior quality, Zolfini beans are naturally gluten-free and rich in protein, fiber, iron, calcium, and other valuable nutrients. Their almost imperceptible skin makes them extremely digestible and velvety on the palate. They offer even cooking and high yield in the kitchen.
How to use: They require soaking for 8-12 hours . They cook slowly for about 60-90 minutes , preferably in unsalted water and over low heat to best bring out their creaminess. Perfect for soups, rustic broths, side dishes, or as a single dish with a drizzle of extra virgin olive oil.
