Ivy is a very common plant in our territories, especially in holm oak and oak forests.
Its flowering and the production of honey that derives from it occur at the beginning of autumn, in September and October.
Ivy honey has rather problematic characteristics due to its rapid crystallization, which makes its processing an arduous and complicated undertaking.
Among honeys, it is the best urinary antiseptic, indicated in cases of cystitis and prostatitis.
Excellent diuretic, effective against intestinal infections.
It pairs very well with fresh pecorino.
To be dissolved in hot drinks such as herbal teas, tea and chamomile.
