Cream of tartar is a natural leavening agent, also called tartaric acid, which has natural leavening properties. It is suitable for vegetarians and vegans.
Since cream of tartar is natural, its leavening action is also natural and it is no coincidence that in American and English recipes you will never find it written to use the classic "baking powder" but to use cream of tartar and sodium bicarbonate: the reason is linked to the fact that cream of tartar gives a softness extreme to leavened products and makes them “inflate” without weighing them down.

Its use in the kitchen is simple: just replace the quantity of yeast called for in a recipe with half cream of tartar and half baking soda. It replaces yeast both for the preparation of pizza and leavened desserts in general.
